Ingredients
- 2 cups jalapeños, thinly sliced
- 2 large sweet onions, thinly sliced
- 4 strips thick-cut peppered bacon
- 2 ripe tomatoes, sliced
- Sourdough bread, sliced thick
- 2 tbsp olive oil
- ¼ cup apple cider vinegar
- 3 tbsp brown sugar
- Salt and black pepper to taste
Instructions
- In a heavy skillet over medium heat, cook peppered bacon until crispy. Set aside and reserve 1 tbsp of drippings.
- In the same skillet, add olive oil and onions. Cook low and slow for 20–25 minutes until deeply caramelized.
- Add jalapeños, brown sugar, and apple cider vinegar. Stir and simmer for another 10–15 minutes until jammy and thick. Season with salt and pepper.
- Toast sourdough slices until golden.
- Layer with tomato, crumbled bacon, and a generous spoonful of the jalapeño onion jam.
- Serve warm and savor every bite.
