- 5 tbsp melted butter
- 2 tbsp sugar
Cherry Vanilla Cheesecake Filling
- 3 blocks (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 eggs
- 1 tbsp pure vanilla extract
- ½ cup sour cream
- ¼ cup heavy cream
Cherry Hibiscus Compote
- 2 cups fresh or frozen cherries, pitted
- 2 tbsp dried hibiscus flowers (or hibiscus tea)
- ¼ cup sugar
- 2 tbsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water
Rose Infused Whipped Cream
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp rose water
- Dried rose petals for garnish
Instructions
- Crust: Preheat oven to 325°F. Mix cookie crumbs, lime zest, lime juice, butter, and sugar. Press firmly into a 9-inch springform pan. Bake 10 minutes. Cool completely.
- Filling: Beat cream cheese until silky smooth. Add sugar and mix well. Add eggs one at a time. Fold in vanilla, sour cream, and heavy cream until just combined. Pour over crust.
- Bake: Place pan in a water bath and bake at 325°F for 55–65 minutes until the center has a slight jiggle. Turn oven off, crack the door, and let it rest 1 hour. Refrigerate at least 4 hours or overnight.
- Compote: Simmer cherries, hibiscus, sugar, and lemon juice over medium heat for 10 minutes. Add cornstarch slurry and stir until thickened. Cool completely.
- Whipped Cream: Whip heavy cream to soft peaks. Add powdered sugar and rose water. Whip to stiff peaks.
- Assemble: Spoon compote over chilled cheesecake. Pipe or dollop rose whipped cream around the edges. Garnish with dried rose petals.
